Veggies for Breakfast? |

The other morning I was rushing to get myself out the door for an important meeting. As I gathered the materials for the meeting from my office, I decided I needed to eat a breakfast that would give me sustained energy because I didn't know how long the meeting would last. I worked my way into the kitchen and looked in the fridge. "Perfect", I thought. There was some leftover steamed broccoli and cauliflower, and some leftover red quinoa from dinner the night before.
After warming up the leftovers, I added a little olive oil, gomasio and turmeric to both the veggies and quinoa. This delicious breakfast slowed me down a little as I joyously savored every bite. I admit it. I'm probably weird, but I love eating vegetables for breakfast. And, why wouldn't I? The first meal of the day is meant to provide us with the energy we need to make it through the morning and start our day off with a bang. Veggies do exactly that for me.
Vegetables are nature's energy source. Think about the nutrients that are jampacked in green vegetables such as chlorophyll, fiber, folic acid, calcium, iron, potassium and much more. And, the really cool thing is, they are very low in fat and calories. In my opinion, vegetables are the perfect food. So, why not eat some for breakfast?
There are few simple ways to incorporate some greens into your breakfast. Scrambled eggs or tofu with sautéed kale and/or spinach on top is really good especially if you add a little salsa and/or guacamole to your dish. In the warmer months, green smoothies are a favorite of mine because you can make a different one every day. All it takes is a little creativity or a good smoothie recipe book. If you're looking for more energy in your day, adding greens to your plate (or cup) at every meal is a good strategy. And, remember to eat a good variety of vegetables as they each offer a little something different. Be adventurous and try some kale or chard for the first time. You might be surprised by their wonderful taste.
