Roasted Walnuts

Prep time: 2 minutes
Cooking time: 15 - 20 minutes

Ingredients:

Raw Walnuts

Directions:
  • Preheat oven to 160 - 170 degrees F.
  • Place one layer of walnuts on a cookie sheet.
  • Roast for 15 - 20 minutes.
  • Optional: To enhance the "roasted" flavor, try putting a little liquid aminos seasoning or tamari (soy sauce) into a stray bottle and mist the nuts before roasting.

Creamy Dreamy Chocolate Delight

Serves: 2

Ingredients:

2 frozen bananas
1 avocado
1/4 cup raw cacao powder
1/4 cup agave nectar
1 teaspoon coconut oil
1/2 teaspoon cinnamon
1 cup water

Apple Sundae

Prep time: 10 minutes

Serves: 2

Ingredients:

2 fuji apples
2 tablespoons almond butter
1/4 cup maple syrup
1-1/2 teaspoon almond extract
2 tablespoons chopped almonds

Directions:
  • Coarsely chop almonds and set aside for topping.
  • In a small mixing bowl, blend the almond butter, maple syrup, and almond extract until smooth. It should be the consistency of caramel sauce.
  • Cut the apples into quarters and core. Then cut the quarters into 3 pieces lengthwise and 1/4-inch pieces crosswise. Place in two serving bowls.
  • Drizzle the sauce over the two bowls of apples and top with almonds.

Simple Strawberry Sorbet

Prep time: 5-7 minutes
Cooking time: none
Serves: 4

Ingredients:

2 packages frozen strawberries
3-4 tablespoons grape juice concentrate
Fresh mint leaves

Directions:
  • Remove strawberries from freezer and thaw 5-7 minutes.
  • Put strawberries and grape juice concentrate into a food processor and puree until smooth and creamy.
  • Garnish with mint leaves. Serve immediately.
